Our version of the traditional Ciabatta is a very versatile small, flat loaf. In thin slices, it makes a great dinner bread or for dipping in olive oil. Sliced lengthwise in becomes the basis for grilled pizza. We use Ciabatta for two of our favorite sandwiches, the Ciabatta-Lotta and the Cobba-Lotta.

Our Cinnamon Raisin Bread may bring back fond memories of the Cinnamon Raisin Toast you had as a child. Well, now that you’re all grown up you can have it any time you want: as long as it’s Monday, Wednesday or Friday. That’s the only time we bake it. Makes great French Toast too.

We were forced into the Cuban Bread-making business, when the only Cuban bakery in town closed suddenly this past summer. Cuban bread is a unique product only found in Tampa, Miami and Key West. It makes great sandwiches, but it goes stale very quickly. That’s why it’s the only bread we bake 7 days a week. Our traditional Cuban Bread recipe has earned a spot on the table of the best Cuban Restaurants in Key West. We use it as the basis for our Cuban Mix Sandwich and Cheese Toast.

This is our original Pain au Levain, but we got tired of explaining what the name meant, so now we simply call it French Sourdough. The progenator of this loaf (and don’t ask me to explain that) dates back to the 1980’s.
