Feeling a Little Creative
We picked up a little Brinkman Smoker over the weekend to have some culinary fun. The result is our first ever homemade pork sausage. We grind up pork butt and season it in our walkin cooler, stuff it in natural hog casings and let is rest overnight. It’s then cold smoked for a few hours. Tomorrow this sausage will make it’s debut on the Sandwich Board. I think we may be on to something.
